Weird Question: One Day Diet

Hello, this might seem weird, but that's fine.

I'm trying to put together a one-day diet. Breakfast, lunch, and dinner -- basically I want to eat the same thing every day (with room for slight variations). I'm a very simple person, and can eat the same thing every day, so no worries there. I ate peanut butter sandwiches for like a year straight. I don't really even like peanut butter sandwiches. Also, I'm not worried about weight loss. My only concern is getting all the nutrients I need, while being able to eat simply and frugally.

I'm thinking stir fries for dinner, which will offer some variety. Maybe with a glass of red wine. And then for snacks throughout the day I'd just load up assorted fruits. But as far as what I should do for my regular lunch and breakfast, I haven't a clue.

Oh, and no oatmeal.

The last thing I"ll mention is that I'm just learning to cook, AKA my skills are very limited. I just learned how to prepare rice the other night, for example. The same could be said for my knowledge of nutrition... very limited. That's why I'm here.

So:

Breakfast: ???
Lunch: ???
Dinner: Stir fry - vegetables, chicken/fish, rice.
Snacks: assorted fruits

Any and all ideas appreciated!
